Black Bean Chili

Black Bean Chili

This chili is great served as is topped with avocado, cilantro, red onion, sour cream or salsa. You can also serve with chips on the side to use as dippers for the chili.

INGREDIENTS:

3 tablespoons avocado oil
4 garlic cloves, minced
1 small yellow onion, chopped
1 teaspoon paprika
½ -1 tablespoon chili powder (depending on how spicy you want it)
1 teaspoon oregano
1 teaspoon cumin
½ teaspoon salt
2-16 ounce cans of black beans, rinsed and drained
1-16 ounce can diced tomatoes
1 cup fresh or frozen corn kernels
1 cup vegetable or chicken stock
½ -1 teaspoon salt or to taste

PREPARATION:
  • Heat oil in medium sauté pan on medium heat
  • Add garlic, yellow onion, paprika, chili powder, oregano, cumin, and salt
  • Saute until onions start to soften about 3-5 minutes
  • Add black beans, diced tomatoes, corn, stock and salt
  • Simmer for 5-7 minutes
  • Serve topped with avocado, cilantro and/or diced red onion
