Roasted Maple Balsamic Roasted Brussel Sprouts

These are delicious as a side dish to any meal or as a leftover added to any salad. Serve with Baked Chicken Nuggets for a completely healthy family meal.

INGREDIENTS:

4-5 cups brussels sprouts cut in half or enough to cover a large baking sheet
2 tablespoons avocado or olive oil
1 teaspoon salt
dash of pepper
3 tablespoons balsamic vinegar
1 ½ tablespoons maple syrup
pinch of sea salt

PREPARATION:
  • Preheat oven to 425°F
  • Line a large baking sheet with parchment paper
  • Add halved brussel sprouts to a large mixing bowl
  • Drizzle with avocado or olive oil, salt, and pepper and toss well.
  • Spread out evenly on baking sheet
  • Bake for 25-30 minutes until they start to crisp up around the edges
  • Remove brussel sprouts from oven and allow them to cool briefly before adding them to a bowl
  • Heat a small saucepan on medium heat
  • Add balsamic vinegar, maple syrup and pinch of salt to pan
  • Turn up heat and briefly bring to a boil, whisking constantly
  • Reduce heat and whisk until mixture starts to thicken
  • Remove from heat and pour over brussel sprouts
  • Toss well and serve
