Easy Roasted Chickpea Recipe
As you can imagine from reading “The Adventures of Veggieman” and learning about his trusted companion, Ms. Chickpea, we are big fans of this flavorful, plant-based legume.
They contain a wide range of vitamins such as vitamin C, vitamin E, and vitamin K and minerals such as selenium, choline, iron, folate, and zinc, to name a few. They are also rich in fiber, provide a great source of plant protein, and make for a great portable snack.
While we enjoy eating them in salads, soups, and of course hummus, they are also deliciously roasted. Below, we’re sharing a very easy (and fun!) Roasted Chickpea recipe that you and your kids can make tonight. Enjoy and happy, healthy eating!
1 16oz. organic chickpeas or 2 cups of raw chickpeas, soak them overnight, cook, and pat dry
Drizzle of olive oil
Pinch of sea salt and pepper
2 tablespoons of sesame seeds
Preheat the oven to 425 degrees
Rinse the chickpeas and pat them dry.
Layout the chickpeas on a piece of parchment paper on a baking tray.
Sprinkle a drizzle of olive oil over the chickpeas.
Sprinkle a pinch or so of sea salt and pepper over the chickpeas.
Place the baking tray in the oven and roast them for around 25 minutes.
When out of the oven, toss them in a bowl. Add in some sesame seeds and enjoy!
