Roasted Garlicky Chickpea and Rice Bowls

These bowls are a great way for kids to choose their own ingredients. Start with the chickpeas and rice and provide healthy options for them to add such as avocado, lettuce, carrots, baked sweet potatoes, cucumber, tomato or any other favorite vegetable. You can top these bowls with any tasty sauce or dressing like the Dairy Free Ranch or Avocado Aioli.
INGREDIENTS:
Garlicky Chickpeas
2-15 ounce cans of chickpeas, drained and rinsed with cold water
1 ½ tablespoons avocado oil
2 teaspoons garlic powder
1 ½ teaspoons salt
pinch of black pepper
½ teaspoon any dried herbs of choice (optional)
1 tablespoon nutritional yeast (optional)
Brown Rice
1 cup brown rice
2 cups water
Pinch of salt
PREPARATION:
Garlicky Chickpeas
- Preheat oven to 400°F
- Line a large baking sheet with parchment paper
- In a large bowl, combine chickpeas, avocado oil, garlic powder, salt, pepper and optional herbs/nutritional yeast and mix well to coat chickpeas
- Spread chickpeas out in an even layer on parchment lined baking sheet
- Roast 35-40 minutes stirring halfway through
- Cool on baking sheet until ready to serve
Brown Rice
- Add Brown rice, water and salt to a medium sized pot
- Bring to a boil, cover and simmer for about 45 minutes or until soft (also follow directions on package for specific types of brown rice)
- Turn off heat and allow to sit 5-10 minutes with lid on
