Black Beans with Brown Rice
Did you see my recent feature on Fox 61? I had the best time speaking with Meal House about my healthy Black Beans and Brown Rice recipe. A great way to get away from typical sandwiches and lunch options, this Central American recipe is packed with fiber and protein, plus healthy fats from the avocado!. And it’s really easy!

Ingredients
2 TBSP Olive Oil
1 Medium Onion Chopped
2 Cloves Garlic Minced
3 Cups Brown RicePre-Cooked at home
2 Cups Black Beans Drained and rinsed (Pre-Cooked)
1 tsp Ground Cumin
1 tsp Ground Coriander
1/2 tsp of Fresh Ginger
2-3 TBSP of Worcestershire sauce
Salt and Pepper to taste
Directions
– In a large skillet heat the olive oil over medium heat, add the onion and cod until translucent
– Then add garlic and cook for 5 minutes until the onion has a caramel color
– Add the black beans and the rice, the spices, ginger, and Worcestershire sauce. Cook over
medium heat until all ingredients are well mixed around 5 minutes
– Salt and pepper to taste and as an option serve with chopped cilantro
You can garnish with chopped cilantro to serve
Cook the Rice the day before or beforehand. Also either cook the beans beforehand or use
packaged beans preferably packaged in a carton
Serve with Avocados on the side
