Chippies and Homemade Baked Beans

Potatoes are a kid-favorite and it’s easy to see why. While the French fry won’t go out of style anytime soon, it’s incredible how many different ways you can prepare potatoes like in our Chippies and Homemade Baked Bean recipe. In addition to potatoes, this dish is loaded with fiber-rich beans, tomatoes, and flavor to get kids excited to try new ways to enjoy one of their favorite veggies. Great as a side dish, or enjoyed as is.

INGREDIENTS:

2 pounds baby potatoes  

1 tablespoon extra virgin olive oil 

1 package feta or cheese of your choice  

Bunch of fresh parsley, chopped 

 

Beans  

1 can cannellini or haricot beans, drained and rinsed 

1 tablespoon extra virgin olive oil  

1 small onion, finely diced 

1/2 – 1 teaspoon sweet paprika or smoked, to taste 

3 sprigs of fresh thyme 

1 garlic clove, minced 

2 bay leaves 

1 can chopped tomatoes, or fresh very finely chopped 

1/2 tablespoon dijon mustard

1/2 – 1 tablespoon brown sugar to taste (option to use a drizzle of maple) 

1 tablespoon apple cider vinegar 

Salt and pepper, to taste  

PREPARATION:
  1. Preheat the oven to 428F 
  2. Slice the potatoes in half or quarters, depending on how big your potatoes are – about one inch thick.  
  3. Place on a non-stick baking tray (option to line with greaseproof paper if you prefer). Toss with 1 tablespoon olive oil and a pinch of salt.  
  4.  Roast for about 40 – 45 minutes, turning once or twice, or until crispy on the outside and soft in the center. 
  5. Meanwhile, make the beans. 
  6. Heat 1 tablespoon of olive oil in a non-stick pan. Fry the onions on medium heat for three minutes, or until soft. Add the garlic, spices, and herbs and cook for one minute.  
  7.  Add the chopped tomatoes, mustard, sugar, vinegar, salt, and pepper. Simmer on medium/low for seven minutes with a lid slightly ajar to stop splitting. Add the beans and simmer for five minutes, adjusting the seasoning to taste. Option to add a little stock if the beans get a bit too thick.  
  8.  Remove the thyme stalks and bay leaves. 
  9.  Serve the baked beans with chippies and top with feta (or cheese of choice) and fresh parsley. 
  10. Enjoy!
