2 pounds baby potatoes
1 tablespoon extra virgin olive oil
1 package feta or cheese of your choice
Bunch of fresh parsley, chopped
Beans
1 can cannellini or haricot beans, drained and rinsed
1 tablespoon extra virgin olive oil
1 small onion, finely diced
1/2 – 1 teaspoon sweet paprika or smoked, to taste
3 sprigs of fresh thyme
1 garlic clove, minced
2 bay leaves
1 can chopped tomatoes, or fresh very finely chopped
1/2 tablespoon dijon mustard
1/2 – 1 tablespoon brown sugar to taste (option to use a drizzle of maple)
1 tablespoon apple cider vinegar
Salt and pepper, to taste
- Preheat the oven to 428F
- Slice the potatoes in half or quarters, depending on how big your potatoes are – about one inch thick.
- Place on a non-stick baking tray (option to line with greaseproof paper if you prefer). Toss with 1 tablespoon olive oil and a pinch of salt.
- Roast for about 40 – 45 minutes, turning once or twice, or until crispy on the outside and soft in the center.
- Meanwhile, make the beans.
- Heat 1 tablespoon of olive oil in a non-stick pan. Fry the onions on medium heat for three minutes, or until soft. Add the garlic, spices, and herbs and cook for one minute.
- Add the chopped tomatoes, mustard, sugar, vinegar, salt, and pepper. Simmer on medium/low for seven minutes with a lid slightly ajar to stop splitting. Add the beans and simmer for five minutes, adjusting the seasoning to taste. Option to add a little stock if the beans get a bit too thick.
- Remove the thyme stalks and bay leaves.
- Serve the baked beans with chippies and top with feta (or cheese of choice) and fresh parsley.
- Enjoy!
